Satisfying My Picky Eater with Mixed Vegetable Fried Rice

My son happens to be a picky eater. A very picky eater. He is known as the boy who doesn’t want to try new food. He is not adventurous when it comes to food unlike his cousins. He doesn’t want coconut water, vegetables, fruits, and anything that you can think of. He will just stick to white rice, hotdog, nuggets, fried chicken, sinigang, sausages, and repeat. Seriously, this kid makes me insane. Introducing him new food will only start a fight.

Elijah is the kind of kid who knows that your spoon has a vegetable in it no matter how small it is. A super power that comes in handy when we are eating fish because he can debone the fish by himself. Teehee!

Having picky eaters at home is kind of frustrating and I feel helpless. My son is not getting enough nutrition because he is only sticking to the food he wants to eat not to mention that most of them are processed. Bad mama eh? I know. That is why when I heard that there is an ongoing Ajinomoto cooking challenge, I joined without hesitation as I am looking forward that their new product will help me in my misery.

Mixed Vegetable Fried Rice with AJINOMOTO PorkSavor™ Recipe

 

Ingredients:

4 cups of rice (cooked)
1 medium sized onion ( red/white)
1 small sized carrot (diced)
1/4 cabbage (finely chopped)
1 can mushroom (7 oz) (sliced)
1 tablespoon tomato sauce
salt/pepper
cooking oil
1 pack Ajinomoto PorkSavor™ Seasoning Mix

 

 

Procedure:

 

  1. In a pan, heat cooking oil. Add the onion and saute until golden brown.
  2. Add carrots, mushroom, tomato sauce, and salt and pepper. Cook for about 2 minutes.
  3. Add rice and mix well. Mix gently for about a minute.
  4. Add the cabbage, then sprinkle with Ajinomoto PorkSavor Mix.
  5. Garnish with spring onion. (optional)
  6. Serve hot and enjoy!
